Day 2 -January 2

Ok.... I didn't go to the Y today.  As soon as I left school, I went to pick Sarah up and got a new pair of running shoes.  They are the exact same ones that I have.  I tried several pairs on and these felt the best.  I really liked the hot pink pair the best!  Oh well.

Lillie fell asleep on the way home, so we didn't go to the Y.  She woke up as soon as we got home but it was already 5:30 and we hadn't eaten yet.  I got on the treadmill and walked 2 miles.  I am doing a half marathon in 2 weeks and I will be walking it.  I will be the first to admit that I have not been training for this race.

I have already paid for it and I am going to do it.  My Mom didn't quit when things got tough.  Cancer patients don't quit when things get rough......Neither am I.  I WILL FINISH!

I am also going by Weight Watchers tomorrow and joining again!

WORK
Today was the first day back after Christmas vacation.  It was ok.  I will be getting a new student tomorrow.  Has anyone ever been so frustrated with work that they look for another job?  Well, I have.  I LOVE my job and teaching but it is becoming not fun anymore.  It is just frustrating.  Then there will be bright moments and I think WOW.  I wouldn't leave but sometimes I just wonder.

Anyway....this is my post for today.  2 miles logged in for 2013!

Hello 2013!

New Year.....I will hopefully continue with what I started 3 years ago.  I had some missteps last year.  I have gained 15 pounds since school started (which is just 4 months).  I have a bad habit of starting something and not continuing with it.  Well....not now....I am going to finish what I started.  I know I will stumble along the way but that is expected.  I have decided I am going to start Weight Watchers again.  I did very well with it when I did it the first time.

I am going to try and blog once a day.  I want to set aside 10 minutes every night to take the time and tell what happened in my day and/or what I am feeling.  You can read it if you want to but I won't be upset if you don't. 

Here is to a GREAT 2013!  I WILL be at my goal weight of 150 lbs. by the end of the year!

My Addiction to Food.....

I had the opportunity to meet these 2 wonderful women!  Well I already knew Olivia (Curlee) Ward (on right).  This was the first time meeting her sister Hannah Curlee.  Olivia and I played basketball together in high school.  They were on last season of Biggest Loser.   Olivia was the winner and her sister was runner up.    Anyway, they were at Covenant Christian Church and said something that I have been thinking about ever since that night.  They said that while they were at the Ranch they both felt God talking to them.  He said that "Why do you crave food when all you have to do is crave Me.  Then you will have everything that you will need.". 

This is exactly how I feel!!  I crave food and I need to crave God more!  I have also come to the realization that I have an addiction to food.  I eat and eat and eat.....and I know that what I am putting in my mouth is bad.  I am also setting a bad example for my girls. 

I need and want to change but I just don't know how to get back into it.  I say "get back into it" because I always start something but never finish it!  This is one of those times....my weight loss journey.  I have said (in fact...I told someone the same exact thing today) I need someone to hold me accountable.  That is NOT what I need...I need to be accountable for myself. 

I hold things in...frustration, feelings, etc... I need to quit doing that and be truthful and speak my mind.  I am going to try to continue this blog in the hopes of doing 2 things!
  • To continue and stick with a lifestyle change and not just exercising & eating right. -and_
  • To have this blog as a way to get my feelings out there and not hold them in.
I may be brutally honest (especially with myself) at times but I think that is what I need to do.    PLEASE feel free to leave comments or even email me.

I started this blog when I was training for my first Susan G. Komen 3 Day for the Cure.  The title says it all....I will change my life "One Step at a Time."

Couscous Lettuce Wraps!

These were GREAT and I am stuffed!!!


My plating skills are not the best but the food was good:)

Couscous Lettuce Wraps
Servings:  4
Serving Size:  3 Lettuce leafs with a 1/4 cup scoop of filling in each leaf

12 Boston Lettuce Leafs
1 C ground turkey
2 1/4 C couscous, cooked
1/4 C chopped green onion
1/4 C carrots, shredded
1/3 C cranberries, dried
6 T hoisin sauce ( I will post this recipe next)
1 t lemon juice, fresh
1/4 t black pepper
1/2 t sea salt

Place 3 lettuce leafs on each plate.  Mix together couscous, turkey, green onion, carrots, & cranberries.  Add 2 ounces or a 1/4 C scoop of the mixture onto the lettuce leaves.  Drizzle equal amounts of hoisin sauce onto each cup.  Garnish with fresh chopped green onion.

per serving:  247 calories,  7 grams fat, 11 grams protein, 36 grams carbohydrates, 3 grams dietary fiber.

Fitness Ridge Hoisin Sauce
Yields 1 1/2 Cups - Serving size: 2 T

1 C balsamic vinegar
3/4 C tomato sauce
1/3 C brown sugar
3 garlic cloves
1 T Worcestershire
1 T spicy brown mustard
1/2 t salt
1/8 C lemon juice
1/2 t ground ginger
1 t fish sauce
1/4 C soy sauce
1/8 C green onion
2 t sesame oil
1/2 t black pepper
1/2 C honey

Add all the ingredients into a soup pot.  Simmer for 15 minutes until the garlic gets soft.  Then add to a blender and blend until smooth.

per serving:  47 calories, 1 gram fat, 11 grams carbohydrates
